Exclusive Macallan 5 Course Pairing Dinner

One of South Florida’s most iconic dining destinations, the Rusty Pelican, will serve as the host venue for a very special dinner on Thursday, January 17th for an equally renowned brand, The Macallan – distillers of Highland single malt scotch whisky. Priced at $198 per person (exclusive of tax and gratuity) the menu, created by Rusty Pelican’s Executive Chef Jimmy Pastor, will pair several of The Macallan’s most coveted releases with dishes designed to complement the flavors of the selected accompaniments. Brand Ambassador, Danny Jimenez, will be on hand to provide commentary regarding the venerable spirit which has been distilling whisky since 1824. The intimate evening gets underway at 7pm with a reception featuring passed bites and a cocktail with The Macallan 12yr Sherry Oak crafted by Rusty Pelican’s Mixologist, Oscar Amaya; guests will be seated for the five-course dinner at 7:30PM.

First Course: Seared Kurobuta Pork, Cauliflower Cream, Roasted Cauliflower with Hazelnut and Raisins
Paired with: Macallan 12yr Double Cask
Second Course: Duck Ravioli, Sliced Duck Breast, Sherry Reduction, Toasted Hazelnut
Paired with: Macallan 15yr Triple Cask
Third Course: Prime Beef Carpaccio, Shaved Foie Gras, Fennel, Parmesan, Arugula
Paired with: Macallan 18yr Sherry Cask
Entrée: 6oz Mishima Wagyu NY, Pommes Puree, Roasted Carrots, Périgueux Sauce
Paired with: Macallan Rare Cask
The Macallan Rare Cask is handpicked from less than 1% of the finest Sherry-seasoned casks maturing in The Macallan reserves. It is made up of a combination of European and American oak Sherry casks of differing sizes, made in different cooperages in Spain, and seasoned by different Sherry Bodegas. Some of these bodegas are sadly no longer in business, making this a truly rare whisky.

The Macallan Reflexion is an exceptional single malt that draws its beautiful natural color and bold flavor from a specific kind of oak cask. This expression is matured solely in first-fill, sherry-seasoned hogshead casks, using both European and American oak, creating an extremely well balanced and multi-faceted single malt. The 250-liter hogshead casks are the smallest type of sherry cask used to mature The Macallan. This type of cask allows a greater surface area of wood to interact with the whisky, giving Reflexion intricate character and a richer, more concentrated flavor profile.
